San Lorenzo coffee, from the Cobán region of Guatemala, is an exceptional washed coffee. Grown in a unique terroir with rich, complex microclimates, its beans are carefully harvested by hand before being treated with great care to preserve their quality. This process reveals the delicate notes of apple, caramel and pecan characteristic of this legendary region.

Meet the producer

Luis 'Wicho' Valdés III is a third-generation coffee grower who heads Fincas Santa Isabel and San Lorenzo, located in the green hills of San Cristóbal, in Guatemala's Cobán region. This region is known for its humid climate characterized by constant rainfall, which creates ideal conditions for growing specialty coffees.


In 2024, the Torrefactory team had the privilege of visiting Finca San Lorenzo and meeting Wicho Valdés in person. The visit provided an opportunity to learn more about his methods of growing and processing coffee, as well as his family's commitment to sustainability and quality.


Finca San Lorenzo, perched between 1400 and 1500 meters above sea level, grows varieties such as Caturra, Catuaí, Bourbon and other experimental varieties. Since the 1960s, the Valdés family has dedicated itself to expanding and improving its plantations, while preserving the surrounding natural forests.

After studying agricultural engineering, Wicho took over the reins of both farms and has been producing high-quality specialty coffees for over 20 years. He also oversees bean processing at his family's Santa Isabel mill, which uses a variety of drying methods to adapt to Cobán's unpredictable climate.


Fincas Santa Isabel and San Lorenzo employ around 600 people from local communities, demonstrating a strong commitment to sustainability and to valuing the work of local people.
