About this café
This decaffeinated coffee comes from the Motozintla region in southern Mexico. A blend of varieties - catimor, sarchimor, red caturra, among others - it is the work of Jorge Arreola Nava. After harvesting, the cherries are dried on a patio and then in a mechanical dryer, before being decaffeinated using the natural Mountain Water process developed by Mexican company Descamex, the only company in the country to use water for decaffeination.
The coffee is first exposed to steam, then immersed and filtered to remove the caffeine, before being dried for four hours and then cleaned. This solvent- and chemical-free method fully preserves the aromatic molecules and flavor integrity, delivering a smooth, rich and authentic cup.

Jorge Arreola Nava, owner of Finca Santa Fé, is firmly committed to preserving coffee production by fighting pollution and banning hunting and flower-picking on his property. After many years in the banking sector, he decided to embark on his coffee adventure in 2009, initially as an exporter. Today, in addition to running Finca Santa Fé, he is responsible for the administrative management and supervision of production, using organic farming methods.
